Because one protocol = one BGP session = one TCP connection = one neighbor
IP address.

But routes of multiple address families can be multiplexed in one BGP session,
therefore two channels.

No, if you want separate neighbor addresses = separate BGP sessions, then
you have to define separate BGP protocols in BIRD.
