a working solution.

as mentioned on https://bird.network.cz/?download&tdir=debian/, the
Debian packages are maintained by Ondrej Sury. Unfortunately back in
2019 there were some small doubts that the old key might have been
compromised, which is why Ondrej Sury created a new GPG key for signing
all future packages.

As you can see from the error message your getting, "B188E2B695BD4743"
does indeed match the new key mentioned on Patreon. You may resolve your
issue by getting the key from https://packages.sury.org/php/apt.gpg
instead of the keys present on the Bird website. You may also retrieve
his updated key from a key server of your choice if you prefer doing so.

It is unfortunate that the current repository on bird.network.cz still
contains the old, discontinued signing keys as both apt.key and apt.gpg
- could they either be updated or removed altogether?
